Ingredients
  

  • 12 cucumber slices
  • 8 large basil leaves, plus more for garnish
  • 1/4 cup fresh lime juice
  • 16 ounces ginger beer
  • 4 ounces vodka
  • 12 ounces sparkling water
  • Ice cubes

Method
 

  1. Place 2 cucumber slices and 2 basil leaves in the bottom of each of four copper mugs or other short glasses.
  2. Gently muddle the ingredients together using a cocktail muddler or the handle of a wooden spoon to bruise them slightly.
  3. Fill each mug halfway with ice. Add 1 tablespoon lime juice and 1 ounce vodka to each mug.
  4. Add 4 ounces ginger beer to each mug, then top each one with sparkling water. Stir gently to combine.
  5. Garnish each mug with a fresh cucumber slice and a few basil leaves.

Notes

- For an extra herbaceous kick, lightly slap the basil leaves before adding them to the mug to release their oils.
- If you don't have copper mugs, any short, sturdy glass will work. The copper mugs just help keep the drink extra cold!
- To make this a mocktail, simply omit the vodka and add an extra 2 ounces of sparkling water or ginger kombucha.
