- In a large bowl, combine the chopped butter lettuce, basil, parsley, thyme, grilled corn kernels, halved cherry tomatoes, chopped red bell pepper, blackberries, chopped peach, seeded jalapeño, and cooked chickpeas.
- In a small bowl or jar, whisk together 1/4 cup olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon honey, 1 teaspoon chipotle chili powder, 1 clove minced garlic, 1 tablespoon lemon juice, salt, and pepper to taste for the dressing.
- Just before serving, pour the prepared dressing over the salad ingredients and toss gently to combine.
- Add the crumbled goat cheese to the salad and toss once more very gently to distribute.
- Serve immediately and enjoy the explosion of flavors.
