Creamy Herb Avocado Dip in 10 Minutes

Ingredients
  

  • 1/2 cup canned chickpeas, drained and liquid reserved
  • 1 clove garlic
  • 2 ripe avocados
  • 1/4 cup tahini
  • juice from 1/2 a lemon
  • juice from 1/2 a lime
  • 1 cup mixed herbs (I use half basil, half cilantro)
  • 1 teaspoon cumin
  • kosher salt
  • olive oil, for drizzling

Method
 

  1. Add garlic and chickpeas to a food processor and puree until smooth.
  2. Add avocado, tahini, lemon juice, lime juice, herbs, cumin, and a large pinch of salt. Puree until smooth.
  3. With the machine running, stream in 1 tablespoon of chickpea liquid at a time until the dip reaches a creamy consistency (you'll need 2-3 tbsp).
  4. Taste and adjust salt and lemon/lime juice as needed.
  5. Spoon into a bowl.
  6. Drizzle generously with olive oil and serve immediately.

- Reserve some chickpea liquid for adjusting consistency if the dip is too thick.
- Taste and adjust seasoning (salt, lemon, lime) generously before serving.
- For a spicier kick, add a pinch of red pepper flakes with the cumin.
