  • 1 ½ cups frozen yellow corn, thawed and drained
  • ¼ cup red onion, finely minced
  • ½ small-medium jalapeño, finely minced (about 1 tablespoon)
  • cup finely chopped fresh cilantro leaves
  • 1-2 tablespoons lime juice (½ – 1 medium lime)
  • ¼ teaspoon fine salt, plus more to taste

Method
 

  1. In a medium bowl, combine the thawed corn, minced red onion, minced jalapeño, chopped cilantro, lime juice, and salt.
  2. Stir all ingredients together until well combined.
  3. Taste the salsa and adjust seasoning, adding more salt if needed.
  4. Let the salsa sit for at least 10 minutes before serving to allow flavors to meld.

- For a less spicy salsa, remove the seeds and membranes from the jalapeño before mincing.
- If you don't have frozen corn, you can use fresh or canned corn, but ensure it's drained well.
