  • 1 cup frozen shelled edamame, defrosted
  • 1/2 cup corn kernels, fresh or frozen, defrosted
  • 1 red bell pepper, diced
  • 1/2 teaspoon sesame oil
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon kosher salt

Method
 

  1. In a medium bowl, combine the defrosted edamame and corn kernels.
  2. Add the diced red bell pepper to the bowl.
  3. Drizzle with sesame oil and low sodium soy sauce.
  4. Season with kosher salt and stir well to combine all ingredients.
  5. Serve immediately as a vibrant side dish.
