Watermelon Hibiscus Mint Popsicles

Ingredients
  

  • 3/4 cup water
  • 2 tablespoons dried hibiscus flowers
  • 1 inch fresh ginger (peeled + finely chopped or grated for more flavor)
  • 1/4 cup honey (add 1-2 tablespoons more for a sweeter pop)
  • 1/4 cup fresh mint
  • 4-5 cups fresh watermelon
  • the juice of 1 lemon

Method
 

  1. Bring water to a boil. Add hibiscus, ginger, honey, and mint. Cover and steep for 20 minutes. Strain into a blender, discarding solids.
  2. Add watermelon and lemon juice to the blender. Blend until smooth.
  3. Strain the mixture through a fine-mesh sieve, pressing to extract all juice. Discard pulp.
  4. Pour the liquid into popsicle molds, filling them about 3/4 full.
  5. Freeze for 1 hour, then insert popsicle sticks. Freeze completely (approx. 4 hours).
  6. To unmold, run molds under hot water for 10 seconds, then gently pull out popsicles.

Notes

- For a sweeter pop, add an extra 1-2 tablespoons of honey.
- For a stronger ginger flavor, grate the ginger instead of chopping it finely.
- Use basil instead of mint for a different herbal note.
- If you don't have popsicle molds, small paper cups work well.
