Method
- Add the oats to a food processor or blender. Pulse 10-15 times until some of the oats are broken into very small pieces and others remain relatively intact. Place them into a mixing bowl.
- Add the remaining ingredients (except the flaky sea salt) to the oats in the mixing bowl. Mix well to combine for 2-3 minutes with a large spoon.
- With slightly damp hands, roll the dough into balls using about 2 Tbsp of dough per bite. If the bites do not stick together, add 2-3 Tbsp of water (1 Tbsp at a time) and stir until dough sticks together when formed into a ball.
- Once all dough has been rolled out, sprinkle evenly with the flaky sea salt.
Notes
- For an extra protein boost, consider adding a scoop of your favorite vanilla protein powder to the mix.
- If the dough feels too dry, add water one tablespoon at a time until it reaches a consistency that holds together when rolled. I've found that sometimes a little extra moisture makes all the difference.
