  • 1/2 cup walnuts
  • 1 cup shredded unsweetened coconut
  • 1 teaspoon vanilla extract (optional)
  • pinch sea salt (optional)
  • 1/4 cup almond butter

Method
 

  1. Place pitted dates and walnuts in a food processor and puree until a smooth, sticky mixture forms.
  2. Spread the shredded coconut evenly on a shallow plate.
  3. Scoop 1 teaspoon of the date/walnut mixture and roll it firmly into a small, uniform ball.
  4. Roll each ball in the shredded coconut to coat completely, ensuring an even layer. Serve immediately or store in an airtight container in the fridge for up to 1 week.
