  • 1 cup shredded unsweetened coconut
  • 1 teaspoon vanilla extract (optional)

  • 1/4 cup almond butter

  • Place pitted dates and walnuts in a food processor and puree until a smooth, sticky mixture forms.
  • Spread the shredded coconut evenly on a shallow plate.
  • Scoop 1 teaspoon of the date/walnut mixture and roll it firmly into a small, uniform ball.
  • Roll each ball in the shredded coconut to coat completely, ensuring an even layer. Serve immediately or store in an airtight container in the fridge for up to 1 week.
