  • cup small pearl tapioca
  • ¼ cup sugar
  • ½ teaspoon vanilla extract
  • ½ cup dark chocolate pieces
  • teaspoon sea salt

  • In a medium saucepan, combine 3 cups chocolate milk and ⅓ cup tapioca and let sit for about 30 minutes to soften.
  • Add ¼ cup sugar and ½ teaspoon vanilla extract to the saucepan and cook over medium-low heat, stirring until the chocolate melts completely.
  • Continue to cook for another 20-30 minutes, stirring frequently every 2-3 minutes to prevent the tapioca from sticking to the bottom and ensure even cooking.
  • Pour the pudding into individual serving dishes and serve warm, or chill in the refrigerator for at least 2 hours until cold and set.
