  • 1 1/2 ounces Cointreau
  • 2 ounces fresh lime juice
  • 2 tablespoons strawberry rhubarb jam
  • 1-2 teaspoons agave nectar, or more to taste
  • 1 tablespoon fresh passion fruit pulp (optional)
  • 2 1/2 cups chopped rhubarb
  • 1 cup chopped strawberries
  • 1/2 cup honey

Method
 

  1. Make the Strawberry Rhubarb Jam: In a medium pot, bring the rhubarb, strawberries, honey, lime juice, and 1/4 cup water to a boil. Boil 8-10 minutes or until the mixture has thickened and becomes jam-like. Stir in a pinch of salt. Let cool. Keep stored in the fridge for up to 2 weeks.
  2. Prepare your glass: Moisten the rim of your glass with a lime wedge and dip it into the salt.
  3. Combine ingredients: In a cocktail shaker, add the silver tequila, Cointreau, fresh lime juice, strawberry rhubarb jam, and agave nectar.
  4. Shake it up: Fill the shaker with ice and shake vigorously until well-chilled and combined.
  5. Strain and serve: Strain the mixture into your prepared glass.
