Ingredients
  

  • 3 cups Honeydew, Cantaloupe, and/or Watermelon
  • 1 cup Ice
  • 2 tablespoons lime juice
  • 1 tablespoon fresh mint leaves
  • 1/4 cup coconut water
  • 1 teaspoon grated ginger

Method
 

  1. Combine all melon pieces, ice, lime juice, fresh mint, coconut water, and grated ginger in a high-speed blender.
  2. Blend on high until the mixture is completely smooth and no chunks remain, about 1-2 minutes.
  3. Taste and adjust sweetness or tartness as desired, adding more lime juice for tang or a touch of honey for sweetness.
  4. Pour the juice into glasses and serve immediately, garnished with a fresh mint sprig or a melon wedge.

Notes

- For an extra chill, freeze some melon cubes beforehand and use them instead of or in addition to ice. This prevents dilution.
- If you prefer a thinner consistency, add a splash of cold water or coconut water to the blend.
- To make it a bit tangy, add a squeeze of fresh lime juice after blending. I always find a touch of acid brightens the melon's natural sweetness.
