Ingredients

  • 1 pound asparagus
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon kosher salt
  • 1 fresh lemon for garnish
  • Freshly ground black pepper

Method

  1. Preheat grill to medium-high heat (around 375-400°F). Place asparagus, olive oil, lemon juice, and kosher salt in a shallow dish.
  2. Toss thoroughly to evenly coat the asparagus with the lemon mixture, ensuring all spears are well-covered.
  3. Place asparagus on the preheated grill. Grill for 2 minutes on each side for thin asparagus, or 3 minutes on each side for thicker asparagus, until tender-crisp. Reserve any leftover lemon mixture.
  4. Remove grilled asparagus from the grill and return it to the shallow dish. Toss with the reserved lemon mixture to coat once more for extra flavor. Garnish with a fresh lemon wedge and black pepper.

Notes

- For an extra layer of flavor, add a pinch of garlic powder to the lemon mixture before grilling. - Don't overcrowd the grill; cook the asparagus in batches if necessary to ensure even cooking and a good char. - Store leftover grilled asparagus in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave to prevent overcooking.
