Ingredients
  

  • 2 teaspoons olive oil
  • 2 to 3 small garlic cloves (thinly sliced)
  • 5 ounces fresh baby spinach
  • fine sea salt and freshly-ground black pepper
  • lemon wedge (optional)
  • 1 tablespoon unsalted butter

Method
 

  1. Sauté the garlic. Heat olive oil in a medium sauté pan over medium heat. Add sliced garlic and cook for 1
  2. Wilt the spinach. Add spinach to the pan and toss continuously with tongs until wilted, about 1
  3. Season and serve. Season with salt and pepper to taste. (I just use a generous pinch of each.) Feel free to add a squeeze of fresh lemon juice, too, if you

Notes

- Don't overcrowd the pan: If you're making a larger batch, wilt the spinach in two separate additions to ensure it cooks evenly and quickly.
- Timing is everything: Spinach cooks down very fast. Watch it closely and remove from heat as soon as it's fully wilted to prevent it from becoming mushy.
- Lemon brightens: A squeeze of fresh lemon juice at the very end truly improves the flavors, adding a necessary zest and acidity. For best results, use fresh lemon.
