Fresh Veggie Spring Rolls with Zesty Mango Sauce!

Ingredients
  

  • 1 ripe mango (diced)
  • 1 inch knob of fresh ginger (grated)
  • 2 tablespoons sweet Thai chili sauce
  • 2 tablespoons rice vinegar
  • Juice from 1 lime
  • ½ cup fresh Thai basil and or cilantro (chopped)
  • 1 large avocado (peeled, pitted + thinly sliced)
  • 2 cups fresh vegetables such as cucumbers (lettuce, carrots and bell peppers - all thinly sliced, diced or cut into matchsticks)
  • Salt + pepper (to taste)
  • A big handful of both fresh cilantro and mint

Method
 

  1. For the Thai Mango Dipping Sauce: In a blender, combine the diced mango, grated ginger, sweet Thai chili sauce, rice vinegar, and lime juice. Blend until smooth.
  2. Add the chopped Thai basil and cilantro to the blender and pulse until chopped. Pour the sauce into a bowl, cover, and refrigerate until ready to serve.
  3. For the Veggie Spring Rolls: Squeeze a little lime juice over the thinly sliced avocado to prevent browning.
  4. Create an assembly line with all your prepared vegetables (cucumbers, lettuce, carrots, bell peppers) ready to go.
  5. Fill a shallow dish with warm water. Take one rice paper sheet at a time and submerge it for 5 to 10 seconds until pliable. Remove and place on a flat surface.
  6. Towards one end of the rice wrapper, layer with 1-2 slices of avocado, a small handful of fresh cilantro and mint, and a handful of mixed veggies. Sprinkle with salt and pepper. Fold both ends towards the center and roll the sheet as tightly as you can without ripping. Place on a serving platter and cover with aluminum foil to prevent drying out.
  7. Continue with the remaining ingredients, adding each prepared spring roll to the platter and keeping them covered with foil at all times.
  8. Serve the spring rolls immediately with the chilled mango dipping sauce.

Notes

- Don't oversoak the rice paper wrappers; 5-10 seconds is usually enough for them to become pliable without tearing. They will continue to soften as you fill and roll.
- For perfectly ripe avocados, choose ones that yield slightly to gentle pressure. If they're too hard, they won't be creamy; if too soft, they'll be mushy.
- If your spring rolls seem to dry out quickly, try misting them lightly with water before covering them with foil. This helps maintain their moisture.
