Ingredients
  

  • 4 cucumber slices
  • 2 strawberries sliced
  • 4 melon balls
  • 2-3 lemon slices
  • 3 ounces Pimms No 1
  • 1 1/2 ounces Elderflower liquor (St-Germain)
  • 2 tablespoons lemon juice
  • crushed ice
  • ginger beer, for topping
  • fresh thyme and mint, for serving

Method
 

  1. In the bottom of a tall glass, layer the cucumber slices, sliced strawberries, melon balls, and lemon slices, filling the glass about halfway.
  2. Pour the Pimms No 1, Elderflower liquor, and lemon juice over the layered fruit and cucumber.
  3. Gently stir the ingredients in the glass to combine.
  4. Fill the glass completely with crushed ice.
  5. Top off the glass with ginger beer.
  6. Garnish with fresh thyme and mint sprigs before serving.
