Method
- Carefully slice off the top of each bell pepper to create a lid.
- Using a small sharp knife, carve spooky or silly faces into the front of each pepper.
- Gently scoop out all seeds and membranes from inside the peppers, then rinse thoroughly.
- Fill the carved bell peppers with your chosen healthy filling.
- Place the "lids" back on top of the filled peppers and arrange them on a platter.
Notes
- Choose firm, smooth bell peppers without blemishes for easier carving. The thicker walls of red or yellow peppers are often more forgiving than green.
