Ingredients
  

  • 9 ounces semi-sweet chocolate chips (we used Enjoy Life! Mega Chunks to keep it soy- and dairy-free)
  • ½ tsp coconut oil (optional)
  • cup unsweetened coconut butter (also known as coconut manna)
  • ¼ tsp peppermint extract (adjust to taste)
  • Extra semi-sweet chocolate chips for topping (optional)
  • pinch sea salt (to enhance chocolate flavor)

Method
 

  1. Melt the chocolate chips with the optional coconut oil in a double boiler or in the microwave in 30-second intervals, stirring between each until smooth.
  2. Once melted and smooth, stir in the coconut butter and peppermint extract until fully combined. Add more extract if desired.
  3. Spoon the mixture into silicone candy molds or small paper liners.
  4. Top with a few extra chocolate chips if desired.
  5. Freeze for at least 15-20 minutes, or until firm.
  6. Enjoy your homemade chocolate mint cups!
