Ingredients
  

  • 12 oz cauliflower florets
  • 1 cup all-purpose flour
  • 1/2 cup vegan eggs (( I used Just Egg brand))
  • 5 oz vegan seasoned croutons, crushed into fine crumbs
  • 1/4 teaspoon garlic powder
  • 1/2 cup buffalo sauce (( I used Texas Pete brand))
  • 1/4 cup vegan butter, melted (( I used Earth Balance brand))
  • carrots & celery (optional) & Ranch/Blue Cheese Dressing

Method
 

  1. Preheat oven to 425 F. Grease or line a baking tray with foil. Set aside.
  2. In a medium bowl, whisk together the all-purpose flour and garlic powder.
  3. In a separate bowl, add the vegan eggs.
  4. In a third bowl, place the crushed vegan seasoned crouton crumbs.
  5. Dip each cauliflower floret into the flour mixture, then into the vegan eggs, and finally coat generously with the crouton crumbs. Place on the prepared baking tray.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  7. While the cauliflower bakes, melt the vegan butter and whisk it together with the buffalo sauce in a small bowl. Once the cauliflower is done, toss the baked florets in the buffalo sauce until evenly coated. Serve immediately with carrots, celery, and your favorite vegan ranch or blue cheese dressing.

Notes

- For extra crispiness, ensure your cauliflower florets are completely dry before coating. Excess moisture can lead to a soggy crust.
- Don't overcrowd the baking sheet. Give each floret enough space to crisp up properly; baking in batches if necessary ensures even cooking.
- When I first made these, I used too much sauce, and they became a bit soft. Toss them quickly in the sauce right before serving to maintain maximum crispness.
- Store leftover wings in an airtight container in the refrigerator for up to 3 days. Reheat in an oven or air fryer at 350°F (175°C) for 8-10 minutes to regain crispness.
