Ingredients
  

  • 1/4 cup raw cashews (unroasted and unsalted)
  • 2 cups water (divided, plus more for steaming beans)
  • 16 ounces fresh green beans (trimmed and halved)
  • 2 teaspoons avocado oil (or your preferred neutral flavored cooking oil)
  • 8 ounces cremini mushrooms (sliced)
  • 1 teaspoon salt
  • 1 tablespoon vegan butter
  • 3 garlic cloves (minced)
  • 2 teaspoons red wine vinegar
  • 2 tablespoons all-purpose flour

Method
 

  1. Preheat oven to 350 degrees F (175 C).
  2. Blend raw cashews and 1 cup water until smooth; set aside.
  3. Steam trimmed green beans for 5 minutes until tender, then rinse with cold water and dry.
  4. Sauté sliced cremini mushrooms with salt in avocado oil for 10 minutes until tender.
  5. Add vegan butter and minced garlic to mushrooms, cook for 30 seconds until fragrant, then add red wine vinegar.
  6. Sprinkle all-purpose flour over mushrooms, combine for 1 minute, then add 1 cup water and pepper, stirring until sauce thickens.

Notes

- For the creamiest sauce, ensure cashews are soaked for at least 30 minutes (or boiled for 10) before blending. This softens them fully for a silky smooth texture.
- When steaming green beans, aim for bright green and tender-crisp. Overcooking will make them mushy.
