Ingredients
Method
- In a medium saucepan, combine oats, almond coconutmilk, water, and chia seeds. Bring to a low boil, then simmer over medium-low heat, stirring often until the liquid is absorbed and the oats thicken, about 15 minutes.
- Remove from heat and stir in the vanilla extract and salt. If the mixture is too thick, thin with more milk.
- Meanwhile, heat a skillet to medium-high. Add coconut oil if using. Sprinkle banana slices with coconut sugar. Once hot, add bananas in a single layer and cook for 1 minute per side until caramelized.
- Divide oatmeal among two bowls. Top with warm caramelized bananas, dark chocolate, a drizzle of honey, and chopped almonds.
- Enjoy immediately for the best creamy, warm, and caramelized experience!
Notes
- For extra creaminess, use full-fat coconut milk.
- Don't overcook the bananas; they should be tender and caramelized, not mushy.
- Adjust sweetness by adding more or less honey or coconut sugar.
