- Heat a large saucepan over medium-high heat. Add avocado oil and rice; stir constantly for 1 minute to toast the rice.
- Add 1 ½ cups water and ¼ teaspoon fine salt; stir.
- Increase heat to high and bring rice to a boil, stirring occasionally. Cover pan, reduce heat to low.
- Simmer, covered, until water is absorbed and rice is tender, about 13-15 minutes.
- Remove pan from heat, keep covered, and let steam for 10 minutes.
- Remove lid, stir in lime zest, lime juice, and chopped cilantro. Fluff with a fork and serve warm.
