  • 2 tablespoons black chia seeds
  • 3 whole medjool dates (pitted)
  • 1/3 cup roasted + shelled pistachios (plus more for topping)
  • 3 frozen medium + very ripe bananas (peeled and sliced)
  • 2 tablespoon unsweetened cocoa powder
  • 1/4 cup plain greek yogurt or use coconut milk yogurt for a vegan option
  • 1 teaspoon vanilla extract

Method
 

  1. Mix almond milk and chia seeds in a small bowl. Let sit for 10-15 minutes until thickened.
  2. Add pistachios and pitted medjool dates to a food processor. Blend until finely chopped and butter-like, about 5 minutes, scraping down sides.
  3. To the blender, add the chia seed mixture, frozen banana chunks, cocoa powder, and Greek yogurt.
  4. Blend until the shake is thick, creamy, and smooth, about 3-4 minutes. Scrape down sides as needed.
  5. If the shake is too thick, add more almond milk until desired consistency is reached.
  6. Pour into a glass, top with extra pistachios, and enjoy immediately!
