  • ½ teaspoon flaky sea salt
  • 1 cup unsweetened cocoa or cacao powder (sifted through a strainer if it's clumpy)
  • ¼ cup unsweetened almond milk

Method
 

  1. Scoop the flesh from 2 ripe avocados into a food processor.
  2. Pulse the avocados a few times until a creamy, smooth consistency is achieved.
  3. Add ¾ cup maple syrup, 2 teaspoons pure vanilla extract, and ½ teaspoon flaky sea salt to the food processor.
  4. Add 1 cup unsweetened cocoa or cacao powder (sifted if clumpy) to the mixture. Process all ingredients until very smooth and well combined, scraping down the sides as needed.

- For the silkiest texture, ensure your avocados are very ripe; they should yield easily to gentle pressure. If the pudding isn't perfectly smooth after blending, continue processing for another minute or two, scraping down the sides.
