Ingredients
  

  • 1 ½ cups raw cashews (may replace ½ cup with raw almonds)
  • 1/3 cup natural nut butter (such as cashew, almond, pecan, peanut butter)
  • 10-12 delget noor pitted dates (or 8-10 medjool dates)
  • 1-2 tbsp A smoother/runnier nut butter works best.

  • 1/4 tsp sea salt

Method
 

  1. Place raw cashews, nut butter, and pitted dates into a food processor (may use high-powered blender).
  2. Process for 3-5 minutes or until ingredients start coming together. Scrape the sides as needed. Test dough with hands to see if it will stick together to form a ball.
  3. With hands, firmly and with pressure, form the dough into about 20 small round bites, each approximately 1 inch in diameter.
  4. Store in a sealed container in the refrigerator for up to 2 weeks or freeze for up to 3 months.

Notes

- For the best consistency, use a smooth, runny nut butter, not a thick or chunky one. If your nut butter is too stiff, warm it slightly to make it more pliable.
- If the mixture seems too dry after processing, add another tablespoon of nut butter until it easily forms a ball when pressed between your fingers. If it's too sticky, try adding a tablespoon of oat flour or finely ground nuts.
- To prevent sticking, lightly dampen your hands with water before rolling the bites. This makes forming the balls much easier and less messy.
- Store the cashew bites in an airtight container in the refrigerator for up to two weeks, or freeze them for up to three months. Thaw frozen bites at room temperature for a few minutes before enjoying.
