Method
- Place raw cashews, nut butter, and pitted dates into a food processor (may use high-powered blender).
- Process for 3-5 minutes or until ingredients start coming together. Scrape the sides as needed. Test dough with hands to see if it will stick together to form a ball.
- With hands, firmly and with pressure, form the dough into about 20 small round bites, each approximately 1 inch in diameter.
- Store in a sealed container in the refrigerator for up to 2 weeks or freeze for up to 3 months.

- For the best consistency, use a smooth, runny nut butter, not a thick or chunky one. If your nut butter is too stiff, warm it slightly to make it more pliable.
- If the mixture seems too dry after processing, add another tablespoon of nut butter until it easily forms a ball when pressed between your fingers. If it's too sticky, try adding a tablespoon of oat flour or finely ground nuts.
- To prevent sticking, lightly dampen your hands with water before rolling the bites. This makes forming the balls much easier and less messy.
